Tomorrow I'll be taking a break from recipes. My creative flow has been working overtime lately, and I want to share a few ideas with you (old + new).
Penne with Bacon & Tomato-Cream Sauce
4-6 slices bacon
1 T. olive oil
2 garlic cloves, minced
1/2 c. dry white wine
2 14-oz. cans petite diced tomatoes
1/2 c. heavy cream
3/4 c. torn basil leaves
Cook bacon in large skillet. Transfer to paper towels. Add additional oil (if needed) and garlic to drippings; saute 1 minute. Add wine, tomatoes (with juice), and cream. Bring to a low boil. Reduce heat to medium and simmer about 10 minutes.
Meanwhile, cook 1/2 pound penne in boiling salted water.
Stir 1/2 c. basil into sauce. Season with salt & pepper. Spoon sauce over pasta in four serving dishes. Sprinkle with bacon and remaining basil.
